Weekend Getaway

Went to the Gold Coast & Brisbane on the weekend for a relatives wedding. Stayed at the Hyatt Regency Sanctuary Cove and worth a mention is the dinner at The Fireplace- choose from their menu and create your own 2 course dinner for just $59 (including coffee & tea), what a bargain for a restaurant at Hyatt. The food was really good and even hubby gave their woodfire wagyu steak a thumb up.

Entree: scallop on crispy pork belly

On Sunday morning, hubby and I walked by the lake at the hotel and took these amazing photos...










The wedding on Sunday was at the chapel at the hotel... It has an AMAZING view... and the fact that the whole chapel is pretty much made of glass, when you sit inside, it feel as though you are in a chapel on water, how awesome!

I've heard the Pachelbel's Canon in D in string quartet many times, and to hear the same tune on this beautiful harp... wow it was good, gives this common wedding song a new sound to me ears.

10 October 2009- dinner with the gals

Had the girlfriends over on Satuday and made them the Lamb Moussaka & Nicoise Salad with Salmon.

All the ingredients:



The moussaka before being assembled (quite a bit of effort to get that far, took about 3 hours of prep, most probably because I'm very slow with the chopping and the eggplant frying also takes a bit of time... Of cos photo taking also took up some time... Hahaa...):



While waiting for the mossaka to bake (with the help of my girlfriends, we pulled this sald together- thanks to hubby for frying the salmon for us):

I was a bit nervous about the bechamel sauce cos it was quite thick... Despite this, once baked the moussake turned out just right. The meal was satisfactory, as we had cleared all the food at the end of dinner.

Will need to start practising other dishes for next dinner party, hopefully around Christmas time.
